Blue Cheese, Capers, & Red Onion
This is a Lovely way to start a dinner party, this appetizer will be one your guest will Love. And You will Love it too, not only does it Tasty Grand, it is just so Easy to prepare. You can even make this up the day before and leave it in the frig, until you need it.
8 ounce Blue cheese
¼ good olive oil
1 Tablespoon fresh squeezed lemon juice
1 Tablespoon red wine vinegar
2 freshly minced garlic cloves
1 teaspoon dry mustard
¼ teaspoon freshly ground black pepper
1 small red onion, finely chopped
2 Tablespoons capers, or to taste
Lettuce leaves for plating
Crumble cheese into medium size bowl.
In another smaller bowl mix together olive oil, lemon juice, vinegar, mustard, pepper and onions. Mix well to combine flavors. Set aside.
On a Pretty platter lay out 3 -4 nice fresh lettuce leaves, (I have also used Big grape leaves) that have been washed, and dried. Arrange Good crackers, in one corner and lay lettuce in a circlur pattern on other side of plate.
Place crumbled cheese in center of lettuce leaves and spread cheese out just a bit. Drizzle Vinaigrette over cheese, and sprinkle capers on top.
Serve right away, or chill up to 1 day.
