Blue Ribbon Buttermilk Waffles

These are my Family’s Favorite. Great for Breakfast, after school snacks or Ice Cream Sandwiches. Easy to prepare and the Taste is OH So Yummy!

1 ½ cups all-purpose flour
½ cup corn starch
1 Tablespoon baking powder
1 teaspoon cinnamon
1 teaspoon sea salt
3 large eggs, separated
2 Tablespoons sugar
1 ¾ cup milk, room temperature
½ teaspoon real vanilla extract
1 stick unsalted butter, melted

In a large size bowl whisk together flour, corn starch, baking powder, cinnamon and salt, set aside.

With mixer whip egg whites stiff, then add sugar, whip to blend.

In another bowl whip together milk, egg yolks and vanilla.

Now, carefully add  milk mixture to flour mixture, mix well then add butter and blend together. Now, very carefully fold in egg whites. Fold to blend. There should be small lumps, do not over mix.

Pour batter onto Hot waffle iron, sprayed with Pam. This recipe makes 5 ½ cups of batter.

Serve with Fresh Fruit, and Maple Syrup. Yummy!

Great way to use leftover waffles. Place them in the freezer and the add ice cream, for a snack.
