I guess I was just really a natural when it came to baking. We should all be so lucky to have such great teachers in our lives; people who know the little Secrets about; how long to stir or bake for the Best results. Little Tricks, little ways of doing things that make a Big differants in the end results. In my book I tried to keep some of the recipes as I received them but, I have learned over the years that an egg separates easier when it’s cold, and eggs are better for bake goods if they go in at room temperature; and make the whole dish better in most cases if the eggs go in one at a time. Also, there is a place for chocolate chips and other places that chopped chocolate is better; unsalted butter over butter or margarine, a little thing like real vanilla beans, or pure vanilla extract, instead of imitation vanilla flavor they may not seem like much but each little thing make your cookies that much better and easier sometimes.
To win a Blue Ribbon at the Southern California Exposistion held every summer at the Del Mar fairgrounds, you have to turn in 1 Dozen cookies, all the same size, shape, and color; and of course the Best tasting cookies you can make. Most of the time you might have to bake 3 or 4 batches of the same cookies just to get that “Perfect Dozen” all on the same day or night so they are all just as fresh as the next. So, over the years I must have made hundreds of thousands of cookies of all kinds some easy and other not so much. On the upside of that when baking you always seem to have people around to help you get rid of the cookie perfections or misfits.
I had lots of Fun with my two children; we would all enter baked goods in the fair, both of the them would enter one or two baked goods, and I would enter many different categories cookies, cakes, pies, bread, fudge, whatever I had a good recipe for.
We had a wall of Fame as you walked in to our house full of ribbons mostly Blue, and small prize checks that we never cashed but framed with our ribbons.
And now I Blessed with my two Grandboys and the time to share the Fun in the kitchen with them too.
Most of us have a favorite cookie to eat or a go to cookie if we need a batch or two for some reason or another, I hope as you look through the cookie section in my book you will find a few new ones you will make and that they will become part of your family memories too.
