Seven-Minute Extra Fluffy Frosting
Seven Minute Frosting is a Wonderful Meringue type frosting.
This Seven-Minute Icing is just so easy to prepare, you will find yourself coming back to this icing time and time again. Also I have added a (page ) of variations from this original Seven-Minute recipe, you will be blown away with the easy changes to this recipe. This quantity is sufficient for a 9-inch two layer cake or the equivalent, and 36 cupcakes. Plus this is so tasty, on any cake, or cupcakes; but for me I’ll take mine on Devils Food any time.
1 ¾ cup sugar
1/2 cup water
4 egg whites, separate cold, keep whites room temperature
1/2 teaspoon cream of tartar
1 teaspoon pure vanilla extract
1.In a saucepan bring sugar and water to a boil 3 -4 minutes, until the mixture reaches 242 degrees (stir only at beginning to blend sugar), then place lid on pot, and check temperature after 3 minutes.
2. Meanwhile beat egg whites, and cream of tartar with electric mixer until fluffy.
3. Slowly pour sugar syrup in to egg mixture with mixer on high speed for about 5 minutes, or until soft peaks form, add vanilla and mix well (about 2 minutes); or continue beating until the frosting is stiff enough to spread.
