Great Great Grandma Weast
For those of you who remember my famous Crazy Quilter Christmas home shows, this is the fudge I sold each year. It is really the best fudge around; even Jack White from channel 10 said so when they came to our house to do a live tour of our show. He said it was out of this world good! Every night when our show would close, I would make more fudge, milk chocolate, white divinity fudge with peppermint, semisweet rocky road and dark chocolate fudge. I would make many pounds each night only to sell out the next day. By the way Great Great Grandma Weast only used Ghirardelli chocolate. And I also make this up for Halloween, I put a few drops of orange food color and garnish with candy corn.
This is the White Divinity Fudge:
3 cups granulated sugar
1½ sticks butter
2/3 cups evaporated milk
In a good size heavy saucepan on medium heat cook and stir sugar, butter and milk. Stirring constantly, when you get a rolling boil, cook and stir for 5 minutes only.
REMOVE FROM HEAT
12 ounces Ghirardelli white chocolate, chopped
Stir in chocolate, stirring with *clean wooden spoon, until chocolate is melted, add
1 teaspoon **CLEAR pure vanilla extract, stir well to combine
1 jar of marshmallow cream
1 cup pecans, chopped
Stir in marshmallow cream; stir a lot until well blended. Add pecans stir until blended.
Pour into a well buttered (I use Pam) 9 x 13-inch pan, let set at room temperature for a couple three (two or three) hours, or overnight.
Cut and enjoy!
* Have a large wooden spoon that is only used for stirring baked good, and candy.
** Clear vanilla has no color it is clear, with all the real vanilla taste (this will add no color to your white fudge.
