Rocky Road Ice Cream
3 ounces semi sweet chocolate, melted
3 large egg yolks, slightly beaten
1 cup milk, hot
½ cup sugar
¼ teaspoon salt
1 teaspoon real vanilla extract
1 cup heavy cream
¾ cup mini marshmallows
½ cup chopped walnuts
Melt chocolate over hot water in a heatproof bowl.
Stir in sugar, yolk, and salt, add hot milk- cream and stir mixture over medium heat about 3 minutes. Add vanilla, strain through a fine sieve, and let the mixture chill. Whip the cream thoroughly until it is firm and fold in chocolate mixture.
Pour into the freezing can. When almost frozen about half way through add marshmallows and walnuts. Mix in well, churn as per manufacture’s directions.
