Creamed English Sweet Peas
Serves 6 -8
4 cups frozen petite peas, thawed
1 1/3 cup water
1/4 teaspoon kosher salt
1/4 teaspoon white pepper
2 cups heavy cream
6 Tablespoon unsalted butter
4 Tablespoon all purpose flour
2 Tablespoon caster sugar
1/4 teaspoon freshly grated nutmeg
1. In a large saucepan combine peas, water, salt, white pepper, and butter over medium-high heat. Bring to a boil and cook for 4-5 minutes, or until peas are just tender.
2. In a small bowl add cream, flour, and sugar, whisking constantly for 1 minute, whisking until smooth. Add cream mixture to cooked peas, constantly whisking, and cook for 4-5 minutes, until thick, and bubbling.
Add Freshly grated nutmeg just before serving. And give it one last whisking.
