Honey Glazed Carrots

Serves 8

2 pounds baby carrots
¼ cup chopped green onions
¼ cup butter
¼ cup honey
1 teaspoon orange zest
½ sea salt
½ teaspoon ground cinnamon
¼ teaspoon freshly ground pepper
2 teaspoon cornstarch
½ cup orange juice
4 teaspoons minced fresh mint or fresh parsley

1.    Place 1-inch of water in a skillet, add carrots. Bring to a boil, reduce heat; cover and simmer for 15 to 20 minutes or until crisp yet tender. Drain and set aside.

2.    In the same skillet, sauté green onions in butter until tender. Stir in honey, orange zest, salt, cinnamon and pepper. Combine cornstarch and orange juice until smooth, stir into onion mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened.

3.    Returned carrots to the pan. Cook and stir for 2 minutes or until heated through. Sprinkle with mint.
